So, I'll start with the sneak peek I gave you all: the bite-sized caprese salads!
These little treats were so easy to make. I used cherry tomatoes, mini mozzarella balls, lettuce, vinaigrette dressing, and toothpicks. The picture pretty much speaks for itself. I chopped the cherry tomatoes in half and put a toothpick thru the lettuce and mozzarella balls to hold them in place. But there is something I would do differently next time.
Next time, I won't drizzle the vinaigrette dressing on top of the mozzarella, I will let each piece soak in a dish (tomatoes down) with the dressing in the bottom. Drizzling the vinaigrette on top made the mozzarella look kind of old and brown--not the look I was going for at all. Anyway, lesson learned.
