Chicken and Shrimp Pad Thai

I hope you're all doing well today.  Last night I made one of my husband's favorite dishes of mine--pad thai.  I typically only use shrimp in it, but he made a special request that I use chicken in it this time.  I've looked at a couple of recipes over the last couple of months to guide me as I make it, but I've kind of tweaked the recipe to become my own and he likes it--so, in my mind, mission accomplished!

I've been asked for the recipe a few times over the last couple of months, so I thought I'd share it with you all today.


Ingredients: 
  • 1 lb fresh pad thai noodles
  • 1 lb of diced chicken
  • 1 lb of precooked frozen shrimp 
  • 1 cup of chicken broth
  • 1 teaspoon of chopped garlic
  • 1 tablespoon of chopped onion
  • 1 cup of bean sprout
  • 1 teaspoon of chili powder
  • 1 bottle of pad thai sauce (most grocery stores or specialty stores sell this, if not you can use a pad thai sauce recipe--I haven't tried one yet)
Steps
  1. Soak pad thai noodles for 20 minutes in a bowl of water 
  2. Heat the wok with cooking oil
  3. Add garlic and onions and stir until the wok turns brown
  4. Add chicken; stir until cooked
  5. Add shrimp and stir until heated thru
  6. Add pad thai noodles and stir and mix for 20 seconds
  7. Add 5 tablespoons of chicken broth; cover wok for 30 seconds
  8. Add 5 tablespoons of pad thai sauce and 1 teaspoon of chili powder; stir and mix for 20 seconds. (If it looks too dry, add a little more sauce).  Mix well for 1 minute
  9. Serve pad thai noodles with bean sprouts
