From Your Kitchen to Mine: Recipes 11-15

If you remember, last week I mentioned that this week would be all slow-cooker recipes.  I love slow-cooker recipes because you can carry on with other activities while your meal is cooking and you don't have to worry about your house burning to the ground.  Of course, you should always take precaution. 

My mom reminds me all of the time about how I used to poke fun at her for using a crock pot when I was younger--what can I say? I was young!  I survived long days at work and getting home late while I was in the Army thanks to my crock pot!

I'm really excited to share this week's recipes with you.  I used a couple of recipes this weekend as we entertained guests, and everything we've tried has been a huge hit so far. 

Oh, and if you decide to try any of them, let me and/or the person supplying the recipe know how you like it.  If you have to choose me or them, choose them-- remember, they're the ones who supplied these tasty recipes!

Crock Pot Ranch Potatoes


I found this recipe at Breakfast, Lunch + Dinner. One thing I love about potatoes is that there are about a million and one ways to cook them.  These potatoes turned out to be really creamy and very delicious.  They were easy to make and even easier to eat!  I thought we may have a few leftovers after dinner, but the leftovers disappeared quickly the next day.  We loved them.  Thank you, Dresden, for sharing this recipe!

Asian Pepper Steak

I found this recipe on my husband's aunt's blog, Karla's Kitchen. Her blog was actually one of the first I started following when I started blogging last year.  For months and months I would drool over her recipes.  They all sounded so good.  I kept telling her that I needed/wanted to try them, but I never got around to it.  Well, this past weekend I did!  I made this dish for a few friends we had over for dinner and it was a hit.  Karla said it makes a lot, and it really did.  It fed 6 adults and we had plenty for about 3 days of leftovers.  If you make this, it may be a good idea to freeze some and save it for later.  Also, Karla gives a little recipe for a topper.  It was so delicious.  My husband was really sad when it ran out, and so was I..it ran out before I could get a picture of it on top of the dish!  Check out Karla's Kitchen, it shows a picture of the topper!  Thanks, Karla!

Angel Chicken...slow cooker
I found this recipe at Cleverly Inspired.  I was excited to use this dish because after reading the ingredients list, it sounded like it would have a lot of flavor.  And man, did it!  There was so much flavor in this dish!  It was 'lick-your-plate good!"  Ahem..yes, I liked my plate...moving on.  I didn't use rice or angel hair pasta to accompany the dish as Tracie recommended, but I used some whole wheat penne pasta and it turned out great.  Oh, you can learn from my mistake:  remember to turn the crock pot to "low" and not "warm."  Yes, I put it on warm and Scott and I moped around together with empty bellies while we smelled the deliciousness as it finished cooking.  Lesson learned.  Thanks for sharing this, Tracie!

Chicken Tikka Masala
 
This recipe came from Meal Planning 101.  It's actually one that I pinned a while back on pinterest and I'm finally making.  We love Indian food.  As I mentioned before, we love flavor!  This meal had a lot of flavor and wasn't too difficult to put together.  It calls for chicken thighs and I accidentally purchased extra chicken breast instead of thighs.  I know if I had thighs, it would've been a little juicier and more tender.  But the slow cooker helped soften up the chicken breast quite a bit. Also, I made a side of quinoa instead of rice.  All-in-all, it think it tasted wonderful--Scott practically begged me to pack some of the leftovers for his lunch the next day.  Next time, I'll be sure to grab the chicken thighs though.  Thank you so much, Kindra!

Slow Cooker Breakfast Casserole

This recipe came from Diary of a Stay at Home Mom.  I know there are a lot of breakfast recipes you can use for slow cookers, I just hadn't used any until this one.  I couldn't believe something this easy could turn out tasting so good! I put everything together before church on Sunday and then we invited friends over for brunch after. By the time we got home, it had just finished cooking and we happily consumed it.  I'll definitely be making this again when we have company.  Thank you, Sandra!

Hot Cocoa Cake


The picture above serves as evidence of the first time I've ever made dessert in a crock pot.  I got this recipe from Sandra Lee's book:  Semi-Homemade Slow Cooker Recipes. I have to admit that the reason I chose this recipe was because of the picture next to it.  I've tried almost all of the dinner meals in the book, but I've been wondering (for the 5 years that I've owned this book) how that dessert would taste.  Now I know--it's delicious!  Here's how you do it: 

Ingredients: 
  • Butter-Flavor cooking spray
  • 2 cups milk
  • 1 box of chocolate cake mix
  • 1 1/4 cups water
  • 3 large eggs
  • 1/3 cup canola oil
  • 1 box chocolate cook-and-serve pudding mix
  • Mini Marshmallows
  • Chocolate flavored syrup
     Steps: 
    1. Coat 5-quart slow cooker with cooking spray; set aside.  In a small saucepan, over high heat, heat milk until almost boiling.  Remove from heat; set aside
    2. In a large mixing bowl, combine cake mix, water, eggs, and canola oil.  Using a handheld electric mixer, beat on medium speed for 2 minutes, occasionally scraping down side of bowl. 
    3. Transfer batter to prepared slow cooker.  Sprinkle pudding mix over cake batter.  Slowly pour in hot milk.
    4. Cover and cook on LOW heat setting for 4 hours.  (Don't lift the lid for first 3 hours of cooking)
    5. Turn off slow cooker.  Sprinkle cake with 1 cup of marshmallows.  Cover; let stand for 5 minutes to allow marshmallows to melt slightly. 
    6. Serve warm by scooping out cake.  Top with additional marshmallows and chocolate-flavored syrup (optional).
    7. ENJOY!

Oh my gosh all I can keep thinking is wow your husband is one lucky guy getting to eat all this delicious food & wow my boyfriend would like me 20 million times more if I could cook some of this amazingness! I guess first step is me & him need to buy a slow cooker!!! ?? Lol... thanks for sharing the great recipes & thank you so much for the sweet comments on the styled shoot I was in! It meant a lot!! :)
