From Your Kitchen To Mine: Recipes 46-50

Hello there, friends!  How's Tuesday treating you so far?  I hope it's going well.  Tuesday's off to a great start for me, although the weather keeps tricking me.  How?  Well, yesterday I rode my bike to the mechanic shop to pick up my car.  When I left home, the weather was beautiful!  About 5 minutes into my ride, however, the sky literally opened up and the rain was relentless...until after I got home, of course, and then it was a beautiful day.  Similarly, this morning I got up to go on my 6 mile run but the thunderstorms forced me to the dreaded treadmill.  I don't mind a couple of miles here and there on the treadmill, but anything over 4 is rough.  As I stepped off the treadmill after my run I looked outside and saw that it was clear and sunny!  Ahhhh...tricked again!!

Anyway, on to the recipes for this week!  As I mentioned last week, I'll be sharing all salads today.  And guess what??  As of today, I'm halfway through the series!!  Can you believe that??  50 recipes down and 50 more to go.  I have a plan for the next 50 recipes so be sure to read below to find out what I'll be doing for the next couple of months.

Caprese Salad Skewers

Caprese salad...yum!  This one came from bell' alimento.  I love caprese salads and I was excited to try this one because of the skewer effect.  It also reminded me of a caprese salad I made last summer.  {If you missed that post, you can check it out here.}  These little guys were super easy to make and just as easy and fun to eat.  Well, I used kinda long skewers so the easy to eat was a little tricky, but they were fun and tasty.  As you can probably gather from the photos, I used some balsamic vinaigrette for some extra flavor. Sadly, my mozzarella balls were super tiny.  As a way to avoid having too much tomato and not enough mozzarella, I chopped my tomatoes in half.  And, unfortunately, my grocery store didn't have any fresh basil, so I sprinkled some basil on top. Gotta work around it, right?  Anyway, we loved them!  Thanks so much, Paula!

Abstract Artist's Salad

This salad recipe came from 90 salads in 90 days.  That's my kinda blog!  Scott and I love avocado and I knew we'd probably love this salad.  The recipe for the dressing was really easy and came out so wonderfully!  The dressing really gave the salad a great punch of flavor.  With the crunchiness of the carrots and cabbage, it was a nice change of texture having the avocado in there. Autumn Chopped Salad

Alright, I know it's not Autumn.  In fact, today is the first day of Spring.  But, I saw this salad's ingredients on Espresso and Cream and I had to give it a shot.  I made this on a night we had friends over.  As my handy taste tester, Scott grabbed a bite and said: "oh, wow!"  Everyone loved it.  There was so much flavor and there were so many dimensions to it--you can't go wrong with this one.  What a treat! Salad In A Jar
Alright, who doesn't love mason jars?  I love them, that's for sure.  I use my jars for just about everything in the kitchen, but up until now, I hadn't used them for salad.  What a great idea!  This one came from Fat Girl Trapped in a Skinny Body---funny name, huh?  It was nice to layer all of the ingredients and shake it up to spread the dressing around.  It was fun to use these as individual servings and it's a great way to store salad throughout the week.  I could have a jar for each meal every day of the week.  Perfect!  Love it, Julia--thanks!

Garlicky Roasted Chickpeas
   
This recipe came from Kalyn's Kitchen.  Chickpeas..garbanzo beans...whatever you want to call them, they're checked off as 'awesome' in my book.  The ingredients really sold me on this one and I thought the flavors would be fantastic.  I wasn't wrong.  After roasting them in the oven and adding the feta cheese, Scott and I had a good ole time snacking on these babies.  These will surely be prepared again in our kitchen! I hope you all enjoyed this week's recipes  ~From Your Kitchen To Mine~!  
 50 Complete- 50 left
 So, I mentioned above that I have a plan for the remaining 50 recipes I'll be sharing.  The first 50 were pretty much a free-for-all and I made some tasty, tasty dishes.  Some were high calorie, some weren't.  For the most part, I lost sight of eating healthy and indulged quite a bit.  There's nothing wrong with indulging every now and then, but after 10 weeks of indulging consistently, I put on a bit of weight---sad, but true.  With that said, my plan is to focus on sharing healthy recipes for the next 10 weeks.  It's not that there weren't healthy meals in the previous 10 weeks, I just wasn't as focused on it as I'm going to be now.  So get ready, friends!
