A New Perspective

Hello Friends,

Well, I'm back from Uganda and I think I'm finally on the right time schedule.  But I see a lot has changed since I've been gone--looks like Blogger has welcomed me home with a completely new interface.  Hmm...this should be interesting.

My 10 day visit to Uganda was an incredible experience.  It's a little difficult for me to put into words right now, mostly because I'm still trying to process everything I saw and experienced while I was over there.  Along with new stories, new experiences, and a new perspective, I came home with over 3,500 photos from our trip.  Needless to say, I have another form of processing to do as well. 

I look forward to sharing more with you over the next few days, weeks, or months.  My shared experiences will probably come as snippets as God reminds me of the things He taught me while I was away.  For now, here are a few photos I took from our first day in Uganda.  

Off and Away

Hello Friends!  I hope you're all doing well.  Some of you may have noticed how sporadic my posts have been over the past couple of weeks, and I'm here to say that they will be even more sporadic over the next couple as well.  Don't worry, I haven't decided to call it quits on blogging--or maybe you weren't worried at all.  Either way, I just want to fill you in on what's been going on that's kept me away and will continue to keep me away.

At the end of February, I shared about a short-term mission trip to Uganda I would be going on in this post.  Well, my friends, the time has come and I'm leaving this week!  I can't believe how quickly time has gone, but I'm very  excited for this trip.

There are plenty of things to look forward to while I'm away:

•  While I won't be blogging in Uganda, one of our team members will be.  You can stay up-to-date on what we're doing on this blog: www.hands4uganda.blogspot.com 

• Finagle A Foto Challenges are still on!  My co-hosts, Marilyn @ The Artsy Girl Connection and  Melanie @ Happy Jax are going to keep on keepin' on while I'm away.  Awesome, right?  Check out their sites for all of the new challenges, challenge winners, and other fun tidbits that come down.  They'll be having lots of fun while I'm away, you don't want to miss out!

• I won't be posting my weekly From Your Kitchen to Mine posts, but I have an arsenal of recipes waiting to be shared with you all upon my return.  Who knows, maybe I'll dedicate a whole week to that! 

•  I will have my camera with me on the trip and plan on snapping a lot of pictures.  Some will be posted on the website above while I'm gone, but many more will be posted when I return!

If you feel led to, please pray for our team as we travel to Uganda.  Here are some specific prayer requests: 

1) That God will work in and through this team
2) That we will have safety and health while in Uganda
3) For understanding of the people and culture of Uganda
4) For communication within the team
5) That God will pour out His Holy Spirit on us and the Ugandan people

Chicken Piccata

This recipe came from Eat Yourself Skinny.  I found Kelly's blog via Pinterest and thought it would be fun to surf around and find a recipe to try.  I saw her pictures of this dish and thought it looked too tasty to pass up.  It didn't take very long to put this dish together--which is always a bonus for me.  The flavors were excellent and Scott and I both enjoyed the dish.  He went back for seconds and the chicken piccata disappeared..nothing wrong with that!  So tasty!  Thanks, Kelly!

Crispy Coriander Chicken

This recipe came from The Fit Cook.  Can you say "4 ingredients and 3 steps"??  Really!  This dish was ready in 15 minutes.  The perfect meal when you need to prepare something really quick.  There was so much flavor for something that didn't take a lot of effort to put together.  Scott and I thought it really enhanced the flavor when you squeeze the lemon juice on top.  This will be in my "go-to" stash of recipes when I'm in a bind for time. Petite Lasagnas

I was so excited when I found this recipe on Can You Stay For Dinner.  In fact, when I saw this recipe, I said to myself "yes, I'll stay for dinner--especially if you're serving this!"  Petite lasagnas!  I love lasagna.  Really, how can you pass that up?  My friend, Mary Joy, was just commented on how you can use a muffin tin for just about anything now.  Petite anything is fun and cute, isn't it?? My petite lasagnas fell a bit short.  You see, I overstuffed them at the beginning which made adding the second layer on top virtually impossible.  Oh well.  I don't think it took anything away from us enjoying these tasty little bundles of goodness.  I think these are also perfect to serve as an appetizer at an open house or a dinner party.  Thanks so much, Andie!!

Cauliflower Pizza Crust (Grain Free)

I found this recipe on Perry's Plate.  Cauliflower as pizza crust??  That was the question that raced thru my brain when I read the title for this recipe.  Hmmm...why not?!  I was so glad I decided to give this recipe a try.  I honestly thought it would take a really long time to put it together, but it didn't!  The longest part of the process was just waiting for the cauliflower to cook until tender, and even then there wasn't much I could do with that, aside from increasing the heat.  For toppings, I decided to use some spinach, pineapple (Scott's fav) and some mushrooms.  I think this is one of Scott's favorite dishes now--he called dibs on leftovers!  Yes, I'll definitely be making this again.  Natalie, you rock!

Oregano Chicken

This last, but not least, recipe came from Flavoursome Food the Easy Way!! How can you say no to any recipe that comes from a blog with that title?  I couldn't--especially after checking out the recipes.  Taruna sent me an email with a link to this recipe and I'm so glad that she did.  This dish was stellar!  The chicken was so tender and juicy, I wish I had made double the portions so we could have more for leftovers.  Next time!...because there will be a next time.  We loved it, Taruna!  Thank you!

One Year...Really??

Hi Friends!  How were your weekends?  I hope you all had a wonderful time of fun and relaxation.

My husband and I had the chance to cash in on one of our anniversary gifts this weekend and we had a couples massage--wonderful experience!!  The next day, I ran my 4th half marathon..I know, kinda flip-flopped.  I probably should've gotten the massage after the 13.1, but it just didn't work out for our schedules.  Anyway, I didn't run a PR, but I was happy to have completed it on such a beautiful day!

Yesterday, 1 April, was also a special day for me because it marked 1 Year since I started The Foreign Domestic.  I can hardly believe it!  Where has all of the time gone??  

The past year has been so much fun and I'd like to thank you all for your warm and thoughtful comments and encouragement!  I've learned so much from so many of you and, honestly, I can't believe I have people outside of my family following my blog.  Thank you!
