A Can of Red Spray Paint


It's been a while since I've pulled out a can of spray paint.  I'd say it was about time.  



My sister-in-law, Julie,  painted this really fun picture for me a few months ago.  A llama with heart-shaped red glasses--love it!  


As soon as I received it, I envisioned putting it in red frame to hang on the wall.  It only took me a few months to take action, but I finally did it.  

I couldn't find a red frame, so I picked up a black one 


And some pimento red spray paint.  



And now it's hanging on the wall.  What do you think? 

I love it! 

And now I have the spray paint bug again.  Hmmm...what else can I spray down?

Zucchini Pasta

Have you ever made zucchini pasta?  I tried it out for the first time a few weeks ago, and I love it!


First, let's talk about the zucchini.  Zucchini serves as an excellent source of vitamin C. A water-soluble antioxidant, vitamin C dissolves in your body fluids and protects your cells from free radicals, which are highly reactive compounds that oxidize your DNA, lipids and proteins, causing cellular damage. Getting enough vitamin C in your diet also aids in nerve cell communication, and helps your body metabolize cholesterol and keeps your tissues strong! It's so much better for you than normal pasta. 



I purchased this little gadget (below) called the Veggetti.  I wasn't sure how it would work, but I'm very pleased with the purchase.  It was well-priced, easy to use, and easy to clean!  


Within a few seconds (seriously, not even minutes), I had my zucchini noodles warming on the stove with a little minced garlic & a bit of olive oil.  I topped it off with a bit of tomato sauce for my son since he seems peculiarly attracted to tomato sauces hahaha.  I've added other veggies to it, and once I made a creamy cauliflower sauce.  I think next time, I'll try an asian noodle dish.

Creamy Lemon Dressing

My friend, C. Baggett, shared this dressing recipe with me the other day and I had to share it here because it's SO tasty.


Creamy Lemon Dressing
From C. Baggett's Kitchen
Ingredients:  
1/3 cup lemon juice
4 tsp lemon zest
1/2 to 1 tsp finely minced garlic
2 tsp dijon mustard
1/4 tsp salt
1/4 tsp pepper
1/2 cup olive oil
1/2 cup plain greek yogurt

Steps: 
1. Combine lemon juice, zest, garlic, mustard, salt & pepper. 
2. Wisk in olive oil until slightly thickened 
3. Add yogurt & mix well

Goals

I think setting goals is SO huge.  Goals help me stay focused and remember why I'm doing what I'm doing.  I think the first step in goal setting is to set a BHAG.  Have you ever heard of a BHAG before?  It's a Big Hairy Audacious Goal.  I've shared my BHAGs with a few people I'm close with--I've learned to guard my goals and only share them with people who I know will support me as I work toward achieving them.  I've learned the hard way that when I share them with the wrong people (the naysayers/doubters), I'm often tempted to give up before I've even begun.  Admittedly, I've succumb to that temptation several times.  


Here is my motivation for one of my health and fitness goals.  I will be wearing this for a special occasion in a few months and I'm determined to wear it well!
