Ingredients
Dough
1 cup gluten-free flour (plus extra for dusting)
¾ cup Greek yogurt
1 tsp baking powder
1 tsp dried oregano
1 tsp garlic powder
½ tsp salt
1 tsp olive oil
Toppings (optional, flexible):
4 tbsp pizza sauce (store-bought or homemade)
5 oz mozzarella, chopped
2 tbsp pesto
Fresh basil leaves
Leftover chicken, sautéed vegetables, or other fridge staples
Instructions
Make the dough: In a medium bowl, combine the flour, Greek yogurt, baking powder, oregano, garlic powder, and salt. Mix until a sticky ball forms. If too sticky, add extra flour 1 tbsp at a time; if too dry, add extra yogurt 1 tbsp at a time. Refrigerate the dough for 30 minutes.
Prepare toppings: While the dough chills, chop or prepare your toppings.
Shape the pizza: Dust your counter with flour. Divide the dough in half and roll or press into 9-inch disks.
Cook the base: Heat 1–2 tsp olive oil in a large skillet over medium-high heat. Cook one dough disk undisturbed for 2–3 minutes until golden spots appear.
Add toppings: Flip the base, then quickly add sauce, cheese, pesto, and basil. Cover with a lid if needed to melt the cheese, cooking for another 2–3 minutes.
Repeat: Remove pizza and repeat with second dough disk. Serve immediately.
Notes & Tips
Keep it simple. This dough is intentionally minimal — perfect for improvising with whatever toppings you have.
If you want a crispier base look a few extra minutes undisturbed on the first side if you like a crunchier crust.
To aid the cheese in melting, cover the skillet with a lid to help cheese melt evenly.
Add spices like smoked paprika, chilli flakes, or dried herbs to the dough for extra depth.
This dough also works beautifully as a quick flatbread to serve alongside dips or soups.
