Easy Greek Yogurt Pie Crust
Flaky, buttery pie crust made easy with Greek yogurt.
Prep Time: 10 minutes
Resting Time: 30 minutes
Serving Size: 1 10-inch pie crust, approx. 440 g dough
Ingredients
1½ cups flour
½ cup Greek yogurt
¼ tsp baking powder
½ tsp salt
85 g butter (¾ stick), cold
Ice water, as needed
Instructions
In a medium bowl, combine flour, Greek yogurt, baking powder, and salt. Add butter and work with your hands until the mixture forms a crumbly dough.
If needed, add ice water 1 tablespoon at a time until the dough comes together into a cohesive ball.
Wrap the dough and refrigerate for at least 30 minutes before rolling out. This helps the butter firm up and makes the dough easier to handle.
Roll out for a 10-inch pie, sweet or savoury, and bake according to your recipe’s instructions.
Notes & Tips
Keep the dough cold as cold butter and yogurt help create a flaky texture.
For the perfect crust, don’t overwork the dough; stop as soon as it comes together.
Works for quiches, fruit pies, and savory tarts.
This is the perfect recipe to make ahead. The dough can be wrapped and frozen for up to 1 month.
